Root Vegetable Purée with Roasted Garlic and Parmesan

Ingredients

1⁄2 cup (125ml) canola oil
3/4 cup (130g) whole garlic cloves
2 cups (500ml) 3.25% milk
6 kg (3 bags) Arctic Gardens Roasting Vegetables Root Blend
4oz (120g) grated Parmesan cheese
Salt & pepper to taste

Preparation

1. In a large pot, simmer garlic in the oil, covered on low heat for 10 minutes (lightly colored)
2. Add milk and frozen root vegetable blend.
3. Simmer on low heat for 45 minutes or until vegetables are cooked through. Stir frequently.
4. Puree, add Parmesan cheese and stir ubtil smooth and creamy.
5. Season to taste.
