Rustic soup minestrone style

Ingredients
- 1/2 cup (125 mL) olive oil
- 2 tbsp (30 mL) minced garlic
- 1 bag (2 kg) Arctic Gardens minestrone vegetable mix
- 8 cups (2 L) crushed tomatoes
- 16 cups (4 L) vegetable broth
- 4 cups (400g) small pasta (orecchiette, conchigliette, ditalini, etc.)
- 8 tsp (40 mL) Italian herbs
- Salt, pepper to taste
- Grated Parmesan cheese (optional)
Preparation
1. In a large pot, sauté garlic in olive oil for 2 min.
2. Add frozen vegetables and sauté for 5 min.
3. Pour in crushed tomatoes and stock, add herbs.
4. Bring to the boil, then reduce heat and simmer for 20 min.
5. Add pasta and cook for a further 5-10 min (depending on the cooking time indicated on your pasta).
6. Adjust seasoning and add broth if necessary, serve hot with grated Parmesan.
