Savoury waffles with vegetables

Ingredients
Waffle batter
375mL milk
225g butter, melted
5 eggs
575g flour
12.5 mL onion powder
Salt and pepper to taste
Broccoli and cheddar waffles
1/4 bag (500g)
Arctic Gardens broccoli florets, chopped or broken
2 1/2 cups (300g) grated cheddar cheese
1 waffle batter recipe
Carrot and pancetta waffles
1/2 bag (1 kg)
Arctic Gardens 2kg carrots, cubed or sliced
2 1/2 cups (300g) pancetta
1 1/4 tsp (6.25 mL) turmeric
1 waffle batter recipe
Spinach and Pea Waffles
6 1/2 cups (750g)
Arctic Gardens cut or chopped spinach
6 1/4 cups (875)
Arctic Gardens assorted peas
1 waffle batter recipe
2 lemons, juice and zest
Preparation
1 Whisk milk, melted butter and eggs in a bowl.
2. In another bowl, add flour and seasonings, then pour in liquid ingredients in 3 batches, mixing well.
Broccoli and cheddar waffles:
1. Microwave broccoli 7-8 min or preheat combi oven in steam mode (212°F /100% humidity) and cook 4-5 min.
2. Finely chop broccoli if using florets or chopped broccoli.
3. Add broccoli and grated cheddar to a basic waffle batter recipe, mix well.
4. Bake in a pre-heated and oiled waffle iron for 7-8 minutes.
Carrot and pancetta waffles:
1. Preheat combi oven to steam mode (212°F /100% humidity).
2. Cook carrots for 4-5 min, then puree with a blender.
3. Toast the pancetta in a frying pan.
4. Add carrot purée, pancetta and turmeric to a basic waffle batter recipe, mixing well.
5. Cook in a pre-heated and oiled waffle iron for 7-8 minutes.
Spinach and pea waffles:
1. Preheat combi oven to steam mode (212°F /100% humidity).
2. Cook peas and spinach 5-6 min.
3. Drain spinach. Add vegetables, lemon juice and zest to basic waffle batter recipe, mixing well.
4. Cook in a pre-heated and oiled waffle iron for 7-8 minutes.
Note: We suggest you serve these waffles with a poached egg and slices of bacon, fresh cheese and smoked salmon, or avocado and fresh herbs.
