Ingredients

2.5 kg Arctic Gardens diced potatoes
2.5 kg Arctic Gardens Fall Medley
1/4 cup (60 mL) butter
1 tbsp (15 mL) Nutmeg
Salt and pepper to taste
2 tbsp (30 mL) vegetable oil
400g Arctic Gardens diced onions
2 kg extra lean ground beef
1/2 cup (125 mL) flour
6 cups (1 kg) Arctic Gardens mixed vegetables (4) or (5)
3 cans 540 mL Arctic Gardens red kidney beans, drained and rinsed
2 cups (500 mL) no salt added beef broth
2 cups (500 mL) BBQ sauce
Salt and pepper to taste

Preparation

1. Preheat combi oven in steam mode to 210°F (100°C) / 100% humidity
2. Bake potatoes and fall medley blend for 8-10 minutes. 
3. Puree potatoes and vegetables with butter, season with nutmeg, salt and pepper to taste. Set aside.
4. Preheat combi oven to 350°F (180°C) / 100% humidity.
5. Brown onions in oil, then add ground beef. Season to taste with salt and pepper. Cook until the water in the onions has almost completely evaporated and meat is browned. Add flour and cook for 1 minute.
6. Add mixed vegetables, beans, broth and BBQ sauce, adjust seasoning to taste and mix well. Cook for about 5 minutes or until sauce is thickened.
6. In 2" high dishes, spread ground beef and vegetables mix in an even layer. Top with a thick layer of mashed potatoes. 
7. Bake for 25-30 minutes.*

 

*If using conventional oven, bake for approximately 40-45 minutes.
This recipe has been tested and approved for hot table use (30 minutes)  and for modified texture (puree)
