Sweet and Sour Crispy Pork

Ingredients
- 1 bag (2 kg) Arctic Gardens Niagara Blend
- 4 ½ lb (2 kg) Pork filets, trimmed and sliced
- 2 cups (500 ml) Cornstarch
Sauce
- 3/4 cup (180 ml) Hoisin sauce
- 2 cups (500 ml) Corn syrup
- 1/2 cup (125 ml) Sambal Oelek sauce
- 1 ¼ cups (310 ml) Cider vinegar
- 1/2 cup (125 ml) Low sodium soya sauce
- 2 ½ cups (625 ml) Cold water
- 1/2 cup (125 ml) Cornstarch
Preparation
- In a pot, mix together the ingredients for the sauce and bring to a boil. Set aside
- Toss the slices of pork in the cornstarch and shake off excess.
- In a fryer heated to 375° F (190° C), fry the pork until golden. Remove and set aside on paper towels.
- Cook the Niagara vegetable mix in boiling water or steam for 4 minutes. Set aside.
- Add the pork to the sauce, toss well and serve on the vegetables.
