Vegetable Beef Goulash

Ingredients
- 3 kg of boneless beef chuck, cubed
- 1,25 kg of Arctic Gardens Diced Onions
- 250 ml of vegetable oil
- 180g of flour
- 2,5kg of tomatoes, peeled and chopped
- 50g of Hungarian paprika
- 2L of beef stock
- 1,5kg of Arctic Gardens Veggies Pick of the Day
- 1 small bunch of flat leaf parsley, chopped
- To taste: salt and pepper
This recipe can also be done with the Arctic Gardens Mixed Vegetables (4) or the Eco-V Mixed Vegetables (4) .
Preparation
- In a braising pan, brown beef cubes.
- Add onions and brown. Season.
- Dust with flour, add tomatoes, beef stock and paprika.
- Cover and simmer on low heat for about 1.5 hours.
- Steam vegetables until blanched.
- When done, add vegetables and chopped parsley to the braising pan. Simmer for 2 minutes and serve.
