Vegetables Buddha Bowl

Ingredients
1⁄4 cup (60ml) olive oil
1 bag (2 kg)
Arctic Gardens Romanesco vegetable mix
6- 8 cloves of garlic, chopped
Salt and pepper
1 1⁄2 cups (375ml) brown rice
1 1⁄2 package (720g (24oz)) extra firm tofu
1⁄4 cup (60ml) chopped fresh ginger
1⁄4 cup (60ml) soy sauce
1⁄4 cup (60ml) hoisin sauce
Homemade sesame dressing
1⁄2 cup (125ml) olive oil
2 tbsp (30ml) toasted sesame oil
1/3 cup (80ml) lime or lemon juice
1 1⁄2 tablespoons (20ml) nutritional yeast
1⁄4 cup (60ml) reduced salt soy sauce
2 tbsp (30ml) honey
3 tbsp (45ml) sesame seeds
8 cups of mixed lettuce shoots
8 green onions
Fresh herbs of your choice or mixed (coriander, mint, basil, parsley)
Preparation
1. Preheat oven to 425°F.
2. In a bowl mix Arctic Gardens vegetables with oil and garlic, salt & pepper
3. On a baking sheet lined with parchment paper, spread the vegetables to form an even layer.
4. In another bowl, mix the ginger, soy sauce and hoisin sauce. Add the tofu previously cut into 1⁄2" thick slices.
Coat the tofu well with the sauce and spread it on a well-oiled baking sheet.
5. Place the plates of vegetables and tofu in the oven and cook for 15 to 20 minutes.
Turn vegetables and tofu slices over halfway through cooking. Set aside
6. Pour all dressing ingredients into a jar, close the lid and stir vigorously.
7. Chop green onions and fresh herbs.
7. In bowls, divide the food next to each other; lettuce, roasted vegetables and cooked rice.
8. Top with roasted tofu, green onions and fresh herbs.
* Combination oven method: 450°F/100% dry - 8 minutes
