Ingredients

  • 250 ml (1 cup) of olive oil
  • 2 x 2 kg of Arctic Gardens Old Fashioned Blend
  • 40 ml (2 ½ tbsp) of ground cumin powder
  • 40 ml (2 ½ tbsp) of garlic, minced
  • 4 x 796 ml (28 oz) of tomato sauce
  • 3 L (12 cups) of vegetable stock
  • 2.84 L (100 oz) of Arctic Gardens Chick Peas , drained and rinsed
  • Cooked couscous
  • 3 ml of salt
  • 1 ml of pepper

Preparation

  1. Heat olive oil, sauté vegetables with cumin, garlic, salt and cayenne pepper for about 3 minutes.
  2. Add tomato sauce vegetable stock and chick peas.
  3. Let simmer uncovered for about 15 minutes.
  4. Meanwhile, prepare Couscous according to package instructions.
  5. Serve with vegetables
