Vegetable Couscous

Ingredients
- 250 ml (1 cup) of olive oil
- 2 x 2 kg of Arctic Gardens Old Fashioned Blend
- 40 ml (2 ½ tbsp) of ground cumin powder
- 40 ml (2 ½ tbsp) of garlic, minced
- 4 x 796 ml (28 oz) of tomato sauce
- 3 L (12 cups) of vegetable stock
- 2.84 L (100 oz) of Arctic Gardens Chick Peas , drained and rinsed
- Cooked couscous
- 3 ml of salt
- 1 ml of pepper
Preparation
- Heat olive oil, sauté vegetables with cumin, garlic, salt and cayenne pepper for about 3 minutes.
- Add tomato sauce vegetable stock and chick peas.
- Let simmer uncovered for about 15 minutes.
- Meanwhile, prepare Couscous according to package instructions.
- Serve with vegetables
