Ingredients

  • 2 kg of Arctic Gardens Montego Mix
  • 454 g of semi-firm tofu, cubed
  • 2 x 150 ml of olive oil
  • 6 garlic cloves, chopped
  • 1.2 kg of chopped tomatoes
  • 454 g of canned chick peas, rinsed and drained
  • A few leaves of fresh basil chopped
  • A pinch of dried oregano
  • 1.5 kg of couscous
  • 2.25 L of water

Preparation

  1. Steam the vegetables for about 8 minutes. Cooking time may vary depending on the quantity of vegetables used and the cooking equipment.
  2. Stir-fry the tofu in a little bit of oil. Set aside.
  3. In a casserole dish, brown the garlic in the remaining oil.
  4. Add the tomatoes and cook on low heat for about 15 minutes.
  5. Add the vegetables, chick peas, tofu, and herbs. Season.
  6. Cook the couscous.
  7. Sprinkle with olive oil, season and de-hull.
  8. Garnish the mixture and serve.
