Ingredients

  • 2.84L (11½ cups) of Arctic Gardens white beans
  • 30 ml (2 tbsp) of canola oil
  • 150 g (¾ cup) of Arctic Gardens Diced Onions
  • 30 g (2 tbsp) of garlic, chopped
  • 4L (8 cups) of water
  • 100 g (½ cup) of chicken stock
  • 1 kg (4 cups) of Arctic Gardens Diced Potatoes
  • 10 g (2 tsp) of chili powder
  • 5 g (1 tbsp) of ground cumin
  • 1.5 kg (6 cups) of firm tofu, cut into 2 cm cubes
  • 1 kg (4 cups) of Arctic Gardens Mini Cauliflower
  • 150 g (¾ cup) of cornstarch
  • 300 ml (10 oz) of water
  • Salt and ground black pepper to taste

Optional for serving

  • 15 ml (1 tbsp) of sour cream
  • A pinch of coriander

This recipe can also be done with the Arctic Gardens Minute Cauliflower Florets .

Preparation

  1. Rinse and drain beans. Set aside.
  2. In a pot, sweat onions and garlic in oil on low heat.
  3. Add water, potatoes, chicken stock, and spices.
  4. Bring to a boil and reduce heat to low. Simmer for 15 minutes.
  5. Add tofu, beans, and cauliflower florets to stock. Simmer on low heat for 10 minutes.
  6. Dissolve cornstarch with (cold) water and add to chili. Simmer and stir frequently until thickened.
  7. Correct seasoning and serve.
