Vegetarian White Bean Chili

Ingredients
- 2.84L (11½ cups) of Arctic Gardens white beans
- 30 ml (2 tbsp) of canola oil
- 150 g (¾ cup) of Arctic Gardens Diced Onions
- 30 g (2 tbsp) of garlic, chopped
- 4L (8 cups) of water
- 100 g (½ cup) of chicken stock
- 1 kg (4 cups) of Arctic Gardens Diced Potatoes
- 10 g (2 tsp) of chili powder
- 5 g (1 tbsp) of ground cumin
- 1.5 kg (6 cups) of firm tofu, cut into 2 cm cubes
- 1 kg (4 cups) of Arctic Gardens Mini Cauliflower
- 150 g (¾ cup) of cornstarch
- 300 ml (10 oz) of water
- Salt and ground black pepper to taste
Optional for serving
- 15 ml (1 tbsp) of sour cream
- A pinch of coriander
This recipe can also be done with the Arctic Gardens Minute Cauliflower Florets .
Preparation
- Rinse and drain beans. Set aside.
- In a pot, sweat onions and garlic in oil on low heat.
- Add water, potatoes, chicken stock, and spices.
- Bring to a boil and reduce heat to low. Simmer for 15 minutes.
- Add tofu, beans, and cauliflower florets to stock. Simmer on low heat for 10 minutes.
- Dissolve cornstarch with (cold) water and add to chili. Simmer and stir frequently until thickened.
- Correct seasoning and serve.
