Veggies Pick of the day tajine style

Ingredients
- 4 minced onions (6 cups)
- 1/4 cup (60 mL) minced garlic
- 3/4 cup (180 mL) olive oil
- 8 tsp (40 mL) ras-el-hanout
- 2 tsp (10mL) cumin (optional)
- 1 bag (2kg) Arctic Gardens Pick of the day vegetables
- 4 cans chickpeas, drained (4 x 398 mL approx. 1kg drained)
- 4 cans crushed tomatoes (4 x 398 mL)
- 1 cup (250 mL) raisins
- 1/4 cup (60 mL) honey - optional
- Salt and pepper to taste
- Fresh coriander or parsley, to serve
Preparation
1. Sauté the onion and garlic in olive oil in a large pot for 2-3 min until translucent.
2. Add spices (ras-el-hanout, cumin) and lightly roast for 1 min to develop aromas.
3. Add frozen vegetables, chickpeas, crushed tomatoes, raisins, salt and pepper. Mix well.
4. Cover and simmer over low heat for 20-25 minutes, stirring occasionally. Add a little water if necessary during cooking.
5. At the end of cooking, taste and adjust seasoning. Add honey to sweeten, to taste.
6. Serve hot, sprinkled with chopped coriander or parsley.
Suggestion : Serve with couscous, bulgur or flat bread (pita or naan type)
