Ingredients

  • 1 1/4 bags (2.5kg) Arctic Gardens home-cut carrots
  • 1/3 cup (75 mL) olive oil
  • 10 tsp (50 mL) zaatar seasoning or herbes de provence
  • Salt and pepper
  • 2/3 cup (150 mL) olive oil
  • 1/3 cup (75 mL) lemon juice
  • 5 tsp (25 mL) honey
  • 2 1/2 cups (625g) crumbled feta
  • 1 1/4 cups (125g) unsalted pistachios, crushed
  • Fresh mint and/or parsley to taste

Preparation

1. Preheat combi oven to 400°F / 100% Humidity. Season frozen carrots with olive oil and zaatar seasoning.
2. Cook carrots for 10-15 min or until roasted. Set aside.
3. Prepare vinaigrette by mixing olive oil, lemon juice, honey and season with salt and pepper to taste. Toss warm carrots with dressing.
4. Serve on a bed of arugula or couscous. Garnish with feta, crushed pistachios and fresh herbs.
