Warm old fashioned mixed vegetables salad with bacon and poached egg

Ingredients
- 7 1/2 cups (750g) smoked bacon or diced bacon
- 1 1/4 bags (2,5kg) Arctic Gardens Old-Fashioned blend
- 20 eggs (for poaching)
- 1/3 cup (75 mL) vinegar for cooking eggs
- Fresh chives or parsley to taste
Mustard vinaigrette:
- 1/3 cup (75 mL) whole-grain mustard
- 1/3 cup (75 mL) Dijon mustard
- 2/3 cup (150 mL) wine or cider vinegar
- 1 1/4 cup (310 mL) olive or canola oil
- Salt, pepper to taste
Preparation
1. Sauté the bacon in a frying pan until golden brown. Drain on paper towels and set aside.
2. In the same pan, add the frozen old-fashioned blend. Sauté over medium heat until hot and lightly browned (about 10 minutes).
3. Prepare the poached eggs: bring water to a boil with a dash of vinegar. Break each egg into a ramekin and gently slide into the water. Poach for 3 min, then drain.
4. Prepare the vinaigrette by mixing all the ingredients.
5. Mix the warm vegetables with the bacon and vinaigrette. Serve with a poached egg on top and a sprinkling of snipped chives or parsley.
