Ingredients

12 cups (3000ml) dry shell-type pasta
1½ bags (1500g) Arctic Gardens assorted peas
8 cups (2000ml) cherry tomatoes, cut in half
8 cups (2000ml, 300g) arugula
4 cups (1000ml) Feta Cheese cubes
1 cup (250ml) diced red onion
2 cups (500ml) chopped fresh basil
Balsamic cream (optional)

¾ cup (180ml) olive oil
1 cup (250ml) balsamic vinegar
1⁄4 cup (60ml) French shallots or red onions
salt & pepper

Preparation

1. Cook peas according to package directions. Run under cold water to cool and set aside.
2. In a large saucepan, cook pasta according to package directions. Drain and set aside.
3. In a bowl, prepare the dressing by mixing all the ingredients (oil, balsamic vinegar, French shallots, salt and pepper to taste)
4. In a large bowl, mix pasta, peas, tomatoes, arugula, cheese, onions and basil.
5. Pour dressing over pasta mixture and toss well.
6. Place warm salad on a serving dish and drizzle with balsamic cream before serving.
