Whipped beet & feta

Ingredients
1 can (100oz)
Arctic Gardens diced beets, drained
1.5 kg feta cheese
2 2/3 cups (665 mL) Greek yogurt
1/2 cup (125 mL) olive oil
1 cup (250 mL) lemon juice
Salt and pepper to taste
2 tsp (10 mL) ground coriander
4 granny smith apples
2 cups (500 mL) pecans
3 tbsp. (45 mL) chopped chives
Preparation
1. Drain beets. Set aside 2 cups diced beets for topping.
2. Blend remaining beets, feta, Greek yogurt, olive oil and lemon juice until completely smooth.
3. Season with coriander and salt/pepper to taste. Pour into serving bowls.
4. Finely dice apples and chop pecans. Combine apple, pecans, chives and remaining diced beet and place on top of bowls.
5. Serve with crudités, apple wedges, toasted pitas or crackers of your choice.
