White Bean and Tomato Soup with Fresh Basil

Ingredients
- 30 ml (2 tbsp) of Canola oil
- 100 g (½ cup) of Arctic Gardens Diced Onions
- 100 g (½ cup) of Arctic Gardens Diced Celery
- 50 g (¼ cup) of garlic, chopped
- 2.85 L (11½ cups) of chopped tomatoes
- 6 L (24 cups) of water
- 100 g (½ cup) of chicken stock
- 2.85 L (11½ cups) of canned white beans, drained
- 30 g (2 tbsp) of chopped basil
- To taste: salt and ground black pepper

A pinch of chopped parsley
Preparation
- In a pot, sweat diced onions, celery and garlic in oil for 2 minutes.
- Add chopped tomatoes, water, chicken stock base, salt and pepper.
- Bring to a boil and add white beans. Reduce the heat to medium and simmer for 30 minutes (between 30 and 45 minutes).
- Add basil and infuse for 10 minutes before serving.
- Serve in a bowl and sprinkle with parsley.
