White Bean and Tomato Soup with Fresh Basil

Ingredients

  • 30 ml (2 tbsp) of Canola oil
  • 100 g (½ cup) of Arctic Gardens Diced Onions
  • 100 g (½ cup) of Arctic Gardens Diced Celery
  • 50 g (¼ cup) of garlic, chopped
  • 2.85 L (11½ cups) of chopped tomatoes
  • 6 L (24 cups) of water
  • 100 g (½ cup) of chicken stock
  • 2.85 L (11½ cups) of canned white beans, drained
  • 30 g (2 tbsp) of chopped basil
  • To taste: salt and ground black pepper

Optional
A pinch of chopped parsley

Preparation

  1. In a pot, sweat diced onions, celery and garlic in oil for 2 minutes.
  2. Add chopped tomatoes, water, chicken stock base, salt and pepper.
  3. Bring to a boil and add white beans. Reduce the heat to medium and simmer for 30 minutes (between 30 and 45 minutes).
  4. Add basil and infuse for 10 minutes before serving.
  5. Serve in a bowl and sprinkle with parsley.
