Winter Salad with Gremolata, Capers and Kalamata Olives

Ingredients
- 1 bag (2 kg) Arctic Gardens Winter Blend
Dressing
- 1/2 cup (125 ml) Kalamata olives, pitted and coarsely chopped
- 1/2 cup (125 ml) Capers, coarsely chopped
- 1/3 cup (80 ml) Olive oil
- 1 tsp (5 ml) Salt
- 1/2 tsp (2.5 ml) Ground black pepper
Gremolata
- 1 tbsp (15 ml) Orange zest
- 1 tbsp (15 ml) Lemon zest
- 2 tbsp (30 ml) Flat-leaf parsley, finely chopped
- 2 tsp (10 ml) Garlic, finely chopped
This recipe can also be done with the Arctic Gardens Medium Broccoli Florets and Arctic Gardens Medium Cauliflower .
Preparation
- Boil or steam the vegetable mix for 4 minutes. Set aside in the fridge.
- In a large bowl, mix together all of the dressing ingredients, then add the gremolata ingredients.
- Add the cold vegetables to the mixture.
- Refrigerate for 30 minutes to allow the flavours to develop. Serve cold as a side dish.
