Ingredients

Dressing

  • 1/2 cup (125 ml) Kalamata olives, pitted and coarsely chopped
  • 1/2 cup (125 ml) Capers, coarsely chopped
  • 1/3 cup (80 ml) Olive oil
  • 1 tsp (5 ml) Salt
  • 1/2 tsp (2.5 ml) Ground black pepper

Gremolata

  • 1 tbsp (15 ml) Orange zest
  • 1 tbsp (15 ml) Lemon zest
  • 2 tbsp (30 ml) Flat-leaf parsley, finely chopped
  • 2 tsp (10 ml) Garlic, finely chopped

This recipe can also be done with the Arctic Gardens Medium Broccoli Florets and Arctic Gardens Medium Cauliflower .

Preparation

  1. Boil or steam the vegetable mix for 4 minutes. Set aside in the fridge.
  2. In a large bowl, mix together all of the dressing ingredients, then add the gremolata ingredients.
  3. Add the cold vegetables to the mixture.
  4. Refrigerate for 30 minutes to allow the flavours to develop. Serve cold as a side dish.
