Ingredients

125 mL (1/2 cup) coconut milk

15 mL (1 tbsp.) curry powder (mild or medium, to taste)

640 g (1 bag) Arctic Gardens Thai Style Blend

Preparation

1. In a frying pan, combine coconut milk and curry powder.

2. Bring to a boil and add Arctic Gardens Thai mixture.

3. Reduce heat, cover and simmer for 6 to 8 minutes, stirring a few times.

4. Serve immediately.

Suggested toppings: Roasted peanuts (or sunflower seeds), fresh cilantro, lime wedges, hot sauce, bean sprouts.
