Traditional Tuscan Soup

Ingredients
- 1 bag (2 kg) Arctic Gardens 4 Bean Salad
- 1/4 cup (60 ml) Olive oil
- 2 cups (500 ml) Onion, chopped
- 1 tbsp (15 ml) Garlic, freshly chopped
- 4 litres Low sodium chicken stock
- 1 litre Crushed tomatoes
- 15 ml (1 tbsp) Dried basil
- 15 ml (1 tbsp) Dried oregano
- ½ tsp (2.5 ml) Ground black pepper
- 2 tsp (10 ml) Salt
- 2 cups (500 ml) Mini pasta shells
Preparation
- In a stock pot, heat oil. Add onion and garlic and sweat for 3 minutes.
- Add the beans, chicken stock, tomatoes, and seasonings. Stir. Cook on medium heat for 30 minutes.
- Cook the mini pasta in boiling water for 8 minutes. Drain.
- Add mini pasta to the cooked soup and serve.
