Ingredients

  • 1 bag (2 kg) Arctic Gardens 4 Bean Salad
  • 1/4 cup (60 ml) Olive oil
  • 2 cups (500 ml) Onion, chopped
  • 1 tbsp (15 ml) Garlic, freshly chopped
  • 4 litres Low sodium chicken stock
  • 1 litre Crushed tomatoes
  • 15 ml (1 tbsp) Dried basil
  • 15 ml (1 tbsp) Dried oregano
  • ½ tsp (2.5 ml) Ground black pepper
  • 2 tsp (10 ml) Salt
  • 2 cups (500 ml) Mini pasta shells

Preparation

  1. In a stock pot, heat oil. Add onion and garlic and sweat for 3 minutes.
  2. Add the beans, chicken stock, tomatoes, and seasonings. Stir. Cook on medium heat for 30 minutes.
  3. Cook the mini pasta in boiling water for 8 minutes. Drain.
  4. Add mini pasta to the cooked soup and serve.
