Vegetable Cocktail with Lemon, Lime and Basil

Ingredients
- 2 kg (8 cups) of Arctic Gardens Cocktail Mix
Dressing
- 250 ml (1 cup) of Canola oil*
- 30 g (2 tbsp) of chopped basil
- 3 (zest) of limes
- 3 (zest) of oranges
- 3 (zest) of lemons
- To taste: salt and ground black pepper
*May be replaced with olive oil.
Preparation
- Prepare dressing in a mixing bowl. Add oil, basil, and citrus zest.
- Steam or boil vegetable cocktail mix in boiling salted water for 4 to 5 minutes.
- Pour the dressing* (at room temperature) onto the hot vegetable cocktail and mix well.
* Ratio of dressing for 25 servings of 80 g of vegetables = +/- 10g
