Iced Matcha Latte
Preparation
Preparation:
1. Strawberry coulis: In a saucepan, heat the strawberries, sugar, and water over medium heat for 5 to 8 minutes, until the fruit softens. Blend until smooth and let cool completely.
2. Liquid base: In a large pitcher, combine the cream, milk, vanilla, and 2 1/2 cups of the cooled purée. Whisk lightly to combine and set aside in the refrigerator. (Keep the remaining purée refrigerated for assembly.)
When ready to serve (Makes 4 servings):
3. Pour 1 3/4 cups of the liquid base into a pitcher. Using a milk frother or a small electric whisk, froth for about 15 to 30 seconds or until the mixture thickens and doubles in volume.
4. In each glass, place 1 tablespoon of strawberry coulis at the bottom, add the ice cubes, then pour in the matcha latte, leaving 2 to 3 cm of space at the top. Top with the chilled strawberry foam and serve immediately.
